Very few quality restaurants are not listed in any guide but here is an exception. La Chaumiere («the cottage» in English) is unique. Located high above the sea and Cap Ferrat on the so-called Grand Corniche it has been well known and appreciated on the Cote D'Azur for many years and offers it's customers the same menu year after year and back they come for more of the same. Their formula is to cook the entire meal in the open fire in front of you. The choice is limited to beef or lamb. To start with there are crudites, pate and other hors d'oeuvres to consume while you are watching your meat being roasted in front of you. The potatoes are baked in the ashes and the bread is lightly toasted, also on the open fire. This has been a Florman's favourite for many years and now, for the first time, it appears in a restaurant guide. Provencale wines are served in carafes — just choose red or white. Booking is essential.
