In the heart of the Black Forest (Schwarzwald) there is a youngish man busy at his stoves in the Hotel Traube Tonbach. He is Harold Wohlfart and many think he is the greatest chef in Germany today. Heiner Finkbeiner, the proprietor, whose family have owned the hotel for over 100 years had the foresight to see the need for a gastronomic restaurant in a hotel otherwise devoted to relaxation, swimming and other sports. Among the culinary creations I can mention are crayfish tails with green asparagus tips and coriander in tomato jelly, grilled dover sole with parsley and capers and glazed breast of Barbary duck with apple and ginger compote and truffle juice.
