On my visits to Rome I have occasionally been able to stay at the charming and luxurious Hassler which has a marvellous position at the top of the famous Spanish Steps and next to the Trinita dei Monte Church. It was the favourite hotel of the late Swedish King, Gustaf VI Adolf, who stayed here regularly. The roof restaurant is one of my favourites with its fabulous view of the city. The food is, as you would expect, classic Italian of a good standard. The service is, as you might also expect, very attentive.

Although Hilton Hotels always keep high standards it is very rare to find one with a superb gourmet restaurant. Well, Rome is one exception and La Pergola is the restaurant. Do try the seven-course gourmet menu, which includes filet of sole with fines herbes and venison in a salt crust with pistachios.

The large windows of the dining room direct your gaze onto the horizon, where the colours of the sea and the sky merge together. The style of cuisine is highly personal — the fruits of much research and interior stimuli. The constant presence of Fulvio in the kitchen and Emanuela in the dining room is a guarantee of high quality.
