It is perhaps not realised in other countries that Basque cuisine is at the top of the gastronomic pyramid in Spain. Near and in San Sebastian are four of the finest restaurants in Spain. Martin Berasategui in Lasarte, 10 kms from San Sebastian, is definitely a three star restaurant in the Florman Guide although the Red Guide limits him to two. Having first worked for his mother in a popular restaurant in San Sebastian he moved out 10 years ago and opened in a restored residence in the heart or the countryside. Among Martin's specialities are pastry and he is probably the best Basque pastry cook. A sample of his dishes is millefeuille of eel and foie gras and also gambas with onion ravioli. I would advise visitors to order the menu de degustation to get a full sampling of Martin's talents.
