For many years I have considered the Hotel de Ville as one of the best (possibly the best) restaurants I have ever eaten in. I know 'what I am talking about as 1 have been there over 50 times in the last 25 years. Its reputation was first established by the legendary Fredy Girardet.

This old brasserie, with its ad hoc interior, is very famous in Lausanne. It's situated in the very center of town, in the Place St-Francois. Of all the great typical dishes on offer, the cheese fondues remain the most celebrated. The establishment's clientele is quite varied; one first comes to the Romand as a student, and keeps coming here well into retirement.
